Pearl Jasmine Tea and Granny Smith Apple Sorbet

1-1/4 lb. DOLE® Chef-Ready Cuts Diced Apples
1-3/4 cups water, divided
3/4 cup sugar
1/2 lemon, juiced
1/4 tsp. salt
1/4 cup pearl jasmine tea leaves


  1. Combine apples, 1 cup water, sugar, lemon juice, and salt in medium sauce pan; bring to a boil.
  2. Cover loosely; reduce heat, simmer 20 minutes, or until apples are very tender.
  3. Heat remaining 3/4 cup water to simmer in small sauce pan; add tea leaves. Remove from heat; cool, let steep.
  4. Remove pan with tender apples from heat; add the tea and tea leaves into the pot. Cover and let cool to room temperature.
  5. Press apple-tea mixture through a fine strainer with back of wooden spoon. Discard remaining tea leaves. Cover with plastic wrap and chill several hours in the refrigerator.
  6. Freeze sorbet base in your ice cream maker according to directions.
