Mango Ginger Couscous Pudding

Couscous pudding flavored with mango and ginger.

INGREDIENTS:

2 cups pearl couscous, uncooked
3 tbsp. unsalted butter
4 cups DOLE® Chef-Ready Cuts Mango Cubes partially thawed
1/4 cup packed brown sugar
1/2 tsp. ground ginger
2 tbsp. almond flavored liqueur
1/4 cup slivered almonds, toasted
3 cups thawed whipped topping

DIRECTIONS:

  1. Prepare couscous according to package directions; allow to cool completely.
  2. Melt butter in small nonstick skillet over medium-high heat. Add mangoes, sugar and ginger; cook 1 to 2 minutes or until mango is soft. Cool. Reserve 1/2 cup mangoes for garnish.
  3. Sprinkle almond liqueur and toasted almonds over cooked couscous in large bowl. Stir in remaining mangoes with sauce. Fold in whipped topping. Divide mixture among 6 parfait glasses or dessert bowls; chill. Garnish with reserved mangoes.
