Mango Couscous Salad with Cumin Mango Dressing
Middle-Eastern style salad with a sweet dressing.
Ingredients
1-½ cups Israeli couscous uncooked
5 cups frozen DOLE Mango Chunks thawed divided
1-½ cups DOLE Seedless Golden Raisins
1 cup celery sliced
¾ cup red onion minced
1-½ cups sliced almonds toasted
Cumin Mango Dressing recipe below
½ cup lowfat sour cream
2 Tablespoons white balsamic vinegar
2 teaspoons ground cumin
2 teaspoons garlic salt
1 teaspoon ground black pepper
Directions
- Prepare couscous according to package directions; cool to room temperature.
- Combine cooked couscous, 3 cups mango chunks, raisins, celery and red onion. Add almonds and dressing, tossing to combine, just before serving.
Cumin Mango Dressing: Puree 2 cups Mango Chunks with sour cream, white balsamic vinegar, ground cumin, garlic salt and ground black pepper. Makes about 1 cup.
