Fire Roasted Peach and Corn Salsa

This sweet and spicy salsa is a great way to take your meal to the next level.

1 cup whole kernel corn
2 cups DOLE® Chef-Ready Cuts Diced Peaches, thawed
2 tbsp. red onion, finely chopped
2 tbsp. red bell pepper, finely chopped
2 tbsp. chopped fresh cilantro
2 tsp. fresh lime juice
1 tsp. maple syrup
1/4 tsp. chili powder
to taste salt and pepper


  1. Preheat oven to 350°F.
  2. Arrange corn on baking sheet sprayed with nonstick cooking spray.  Bake 10 to 15 minutes or until lightly browned; cool slightly.
  3. Stir together corn with peaches, red onion, red bell pepper, cilantro, lime juice, maple syrup, chili powder, salt and pepper in medium bowl.  Cover; refrigerate at least 1 hour.
