Fire Grilled Pineapple, Tomato and Chipotle Salsa

1 qt. DOLE® Pineapple Cubes, drained, reserve juice
3 tomato, 1/2-inch dice
1 onion, small dice
2 tbsp. chipotle pepper, finely diced
1/2 cup chives, sliced thin
1/2 cup fresh cilantro, coarsely chopped
1/2 cup olive oil
to taste salt and pepper


  1. Place pineapple on top of wire mesh and grill over an open fire until slightly charred.
  2. Combine the reserved pineapple juice and all the remaining ingredients with the pineapple while warm to develop flavor.  Season to taste with salt and pepper.
  3. Place in non-reactive container and refrigerate for service.
