Pineapple Lemongrass Thai Tea

INGREDIENTS:

2 oz. DOLE® Chef-Ready Cuts Pineapple Cubes, thawed
1 tsp. or 2 pieces (2-inch) lemongrass paste or chopped fresh lemongrass
4 mint leaves
Fresh Agave Sour (recipe below)
1-1/4 oz. Tuaca liquor
1-1/2 oz. ginger ale
for garnish lemongrass stalk

DIRECTIONS:

  1. Muddle pineapple, lemongrass and mint in shaker.  Combine Tuaca and fresh agave sour in the shaker; shake vigorously.  Strain loosely into glass with ice.  Top with ginger ale.  Garnish and serve.

    Variation: Omit Tuaca for a refreshing non-alcoholic beverage.

    Fresh Agave Sour: Combine 1 cup fresh lemon juice, 1 cup fresh lime juice, 1 cup water, and 1-1/2 cups agave nectar in a 1/2 gallon container.  Whisk to stir completely.  Store chilled; shake again before use.  Makes about 1 quart.
