Mango and Coconut Thai Drink

A refreshing cocktail made from mangoes and coconut.

INGREDIENTS:

2 oz. DOLE® Chef-Ready Cuts Mango Cubes partially thawed
1-1/2 oz. light coconut milk
1-1/2 oz. agave nectar
1-1/4 oz. coconut rum
3/4 oz. fresh lime juice
for garnish toasted shredded coconut
for garnish fresh mint leaves

DIRECTIONS:

  1. Muddle mango cubes in shaker.
  2. Combine light coconut milk, agave nectar, coconut rum and fresh lime juice in shaker with ice.  Shake vigorously and pour into glass.
  3. Garnish with toasted coconut and mint; serve.

    Variation: Remove coconut rum for a refreshing non-alcoholic beverage.
