Chile Mojito

Apple and pineapple give this mojito character.

INGREDIENTS:

1 oz. DOLE® Chef-Ready Cuts Diced Apples, thawed
1-1/4 oz. Spiced Rum Raisin Infusion (recipe below)
1-1/2 oz. Fresh Agave Sour
1/2 oz. DOLE Pineapple Juice
8 fresh mint leaves
1 oz. club soda

DIRECTIONS:

  1. Muddle apples in shaker.  Combine Rum infusion, agave sour, pineapple juice, and mint leaves in shaker with ice.  Shake vigorously and pour into glass with ice.
  2. Top with club soda and additional ice.  Garnish with additional mint, if desired.  

    Spiced Rum Raisin Infusion: Combine 1000ml bottle of Spiced Rum and 2 cups DOLE Raisins in a liter fusion jar.  Infuse for 48 hours.  Strain and transfer to a store and pour container.  Makes about 1-1/4 quarts.
