Cranberry Banana Bread
Classic banana bread spruced up with cranberries. Perfect for the holidays.

extra-ripe, medium DOLE® Bananas, peeled

1 cup

frozen DOLE Cranberries, partially thawed
|
3/4 cup
|
sugar
|
1/2 teaspoon
|
grated orange peel
|

1/2 cup

vegetable oil
|
2 cup
|
all-purpose flour
|
1 teaspoon
|
baking powder
|
1 teaspoon
|
ground cinnamon
|
1/2 teaspoon
|
baking soda
|
1/8 teaspoon
|
salt
|
3/4 cup
|
chopped walnuts (optional)

DIRECTIONS:
- Preheat oven to 350F. Spray 9x5-inch loaf with cooking spray.
- Blend bananas in covered blender container until smooth (1-1/2 cups).
- Chop cranberries; combine with sugar and orange peel. Beat in bananas, eggs and oil.
- Combine dry ingredients and nuts; beat into banana mixture just until blended. Turn batter into prepared pan.
- Bake 50 to 60 minutes or until wooden pick inserted comes out clean. Cool 10 minutes. Invert on wire rack to complete cooling.
