Cranberry Banana Bread

Classic banana bread spruced up with cranberries. Perfect for the holidays.

2 extra-ripe, medium DOLE® Bananas, peeled
1 cup frozen DOLE Cranberries, partially thawed
3/4 cup sugar
1/2 teaspoon grated orange peel
2 egg(s)
1/2 cup vegetable oil
2 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/8 teaspoon salt
3/4 cup chopped walnuts (optional)


  1. Preheat oven to 350F. Spray 9x5-inch loaf with cooking spray.
  2. Blend bananas in covered blender container until smooth (1-1/2 cups).
  3. Chop cranberries; combine with sugar and orange peel. Beat in bananas, eggs and oil.
  4. Combine dry ingredients and nuts; beat into banana mixture just until blended. Turn batter into prepared pan.
  5. Bake 50 to 60 minutes or until wooden pick inserted comes out clean. Cool 10 minutes. Invert on wire rack to complete cooling.
