Classic Banana Bread

A bread that is wonderful for breakfast or snacking.

INGREDIENTS:

14.6 oz. (3 cups + 2 tbsp.) all-purpose flour
0.2 oz. (1-1/2 tsp.) baking powder
0.09 oz. (3/4 tsp.) baking soda
0.09 oz. (3/4 tsp.) salt
0.09 oz. (3/4 tsp.) ground cinnamon
4 oz. (1/2 cup) margarine, softened
6.8 oz. (1 cup + 2 tbsp.) packed brown sugar
4 oz. (2) egg(s)
1-1/2 lb. (3) DOLE® Bananas, ripe, mashed
3 oz. (6 tbsp.) milk
1/4 oz. (1-1/2 tsp.) vanilla extract

DIRECTIONS:

  1. Combine flour, baking powder, baking soda, salt and cinnamon in medium bowl; set aside.
  2. Beat margarine and sugar in large bowl until light and fluffy. Beat in eggs. Beat in banana, milk and vanilla until blended. Add flour mixture; beat until just blended.
  3. Pour into 8-inch square baking pan sprayed with vegetable cooking spray.
  4. Bake at 350°F., 65 to 70 minutes or until toothpick inserted in center comes out clean. Cool in pan 10 minutes. Remove from pan; cool completely on wire rack.
