Banana Peanut Butter Muffins

Bananas and peanut butter give this muffin the perfect balance between sweet and salty.

15 oz. (3 cups) all-purpose flour
1 tbsp. baking powder
1/4 tsp. salt
10-1/2 oz. (1-1/2) granulated sugar
6 oz. (3/4 cup) peanut butter
1 cup frozen DOLE® Chef-Ready Cuts Sliced Bananas, thawed and mashed
6 oz. (3/4 cup) lowfat milk
2 egg(s)
1/2 oz. (1 tbsp.) vanilla extract
8 oz. (1-1/2 cups) seedless raisins
1 oz. (1/3 cup) rolled oats


  1. Combine flour, baking powder and salt in bowl; set aside.
  2. Beat sugar, peanut butter and butter in mixer bowl until light and fluffy.
  3. Add banana, milk, eggs and vanilla, beat until well blended.
  4. Add flour mixture and raisins, stir until blended.
  5. Portion batter into paper lined or greased muffin tins using #16 scoop.
  6. Sprinkle oats evenly over batter.
  7. Bake at 400°F., 18 minutes or until done. Cool on wire rack; serve warm.
