Banana Bread with Saigon Cinnamon

2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground Saigon cinnamon
1/2 cup butter or margarine, softened
3/4 cup packed brown sugar
2 egg(s)
1/4 cup sour cream
1 tsp. vanilla extract
1 cup chopped almonds or walnuts, toasted
2-1/4 cups frozen DOLE® Chef-Ready Cuts Sliced Bananas, thawed and mashed


  1. Preheat oven to 350ºF.
  2. Combine flour, baking powder, baking soda, salt and cinnamon in medium bowl; set aside.
  3. Beat butter and sugar in large bowl until light and fluffy.  Beat in eggs.  Beat in bananas, sour cream and vanilla until blended.  Stir in flour mixture; beat until just blended.  Stir in nuts.
  4. Pour into 9 x 5-inch baking pan sprayed with nonstick cooking spray.
  5. Bake 55 to 65 minutes or until wooden pick inserted in center comes out clean.  Cool in pan 10 minutes.
