Banana Bran Muffins

Classic banana bran muffins.

INGREDIENTS:

4 lb. (16 cups) all-purpose flour
1 lb. 3 oz. (2-1/3 cups) granulated sugar
1 lb. 3 oz. (12-1/2 cups) wheat bran
1 oz. (3 tbsp.) baking powder
1 oz. (2 tbsp.) baking soda
2 tbsp. + 1 tsp. ground allspice
2 tbsp. + 1 tsp. ground cinnamon
4-1/2 cups vegetable oil
7 lb. 5 oz. (20 bananas) ripe DOLE® Bananas, pureed
32 oz. (1 qt.) milk
10 oz. (1-1/4 cup) molasses
1 lb. 10 oz. (14 eggs) egg(s)
4 lb. 13 oz. (13 cups) seedless raisins

DIRECTIONS:

  1. Combine flour, sugar, bran, baking powder, baking soda, allspice and cinnamon in mixer bowl. Mix until blended.
  2. Add oil, pureed banana, milk, molasses, eggs and raisins. Mix until just moistened.
  3. Using #10 scoop, portion batter into paper lined, 3-inch muffin pans.
  4. Bake at 375°., 25 to 30 minutes, or until muffins test done.
