Waldorf Salad

A refreshing and crunchy salad.

INGREDIENTS:

4 fl. oz. (1/2 cup) apple cider vinegar
1/3 cup canola oil
2 Tbsp honey
1 tsp Dijon-style mustard
1/4 tsp salt
1/4 tsp ground black pepper
24 oz. (4 cups) DOLE Chef-Ready Cuts Diced Apples thawed
2-1/2 cups red grapes halved
4 oz. (1 cup) chopped walnuts toasted
3/4 cup celery sliced
12 butter lettuce leaves
as needed crumbled feta cheese

DIRECTIONS:

  1. Whisk together vinegar, oil, honey, mustard, salt and pepper in bowl.
  2. Combine apples, grapes, walnuts and celery in large bowl.  Add dressing to taste; toss to coat.
  3. Portion salad using #8 scoop onto lettuces leaves.
  4. Garnish with cheeses, if desired
