Tropical Thai Peanut Salad

Cashews give texture to this tropical Thai salad.

12 oz. rice noodles, dry
64 oz. DOLE® Tropical Fruit Salad, drained
12 oz. (1-1/2 cups) oriental peanut salad dressing
6 chopped green onions
12 oz. cashews
1 cup shredded DOLE Carrot(s)
6 oz. toasted coconut
1 tbsp. toasted sesame seed


  1. Bring 2 quarts water to a boil, remove from heat; soak noodles in water 5 minutes.  Drain, rinse with cold water.
  2. Combine noodles, tropical fruit salad, dressing, green onions, cashews, carrots and coconut in large bowl.  Toss to combine.
  3. Garnish each serving with sesame seed.
