Tropical Fruit Rice Salad

Tasty tropical fruit salad with rice.

INGREDIENTS:

7 lb. 4 oz. (1 gal. 1 qt.) long grain rice, cooked
6 lb. 10 oz. (1 (#10) can) DOLE® Tropical Fruit Salad, drained
1 lb. 8 oz. (3) chopped cucumber
8 oz. (1) red, yellow, or green bell pepper finely chopped
4 oz. (1-3/4 cups) DOLE Green Onions, chopped
1 tbsp grated lemon peel
1 lb. 12 oz. (3-1/2 cups) fat free or Italian salad dressing

DIRECTIONS:

  1. Combine rice, tropical fruit salad, cucumbers, bell pepper, green onions and lemon peel in large bowl.
  2. Pour dressing over salad; toss to coat evenly.
