Honey Mint Spinach Salad

A refreshingly sweet spinach salad.

5 lb. (10 cups) DOLE® Pineapple Chunks, drained, juice reserved
1 lb. 8 oz. (24 cups) DOLE Baby Spinach
60 oz. (7-1/2 cups) DOLE Mandarin Oranges, drained
1 qt. radishes, sliced
1 qt. cucumber, sliced
6 oz. (3/4 cup) olive oil
2 tbsp grated lemon peel
4 oz. (1/2 cup) lemon juice
2 oz. (1/4 cup) honey
3 tbsp. fresh mint leaves, chopped


  1. Combine pineapple chunks, spinach, mandarin oranges, radishes and cucumber.
  2. Blend together reserved 2 cups pineapple juice, oil, lemon peel and juice, honey and mint leaves.
  3. Pour over salad; toss to evenly coat.
