Fire Grilled Pineapple Gorgonzola Salad

A quick, simple recipe for pineapple salad.

INGREDIENTS:

24 DOLE® Pineapple Slices, drained
4 heirloom tomato
10 oz. (1-1/4 cups) Italian herb vinaigrette
8 oz. (1 cup) Gorgonzola cheese, crumbled
fresh Italian parsley leaves

DIRECTIONS:

  1. Grill pineapple slices; cool.
  2. Arrange tomatoes and pineapple slices on large platter alternating pineapple and tomato slices.
  3. Top with Gorgonzola cheese, sprinkle vinaigrette evenly over platter. Garnish with parsley.
