Beef Noodle Salad with Orange Anise Dressing

3/4 cup orange juice
3 star anise
1 tsp sugar
3/4 cup olive oil
2 tbsp white wine vinegar
2 tbsp less sodium soy sauce
1 tsp sesame oil
1/2 to 3/4 tsp crushed red pepper
10 oz DOLE® Angel Hair Coleslaw
3 cups thin rice noodles
8 oz. (2 cups) rare roast beef, cut into thin strips
1 cup snow peas, blanched and julienne-cut
1/3 cup DOLE Carrot(s), julienne-cut
15 oz DOLE Mandarin Oranges, drained
3 tbsp sliced green onions
1 tbsp toasted sesame seed


  1. Stir together orange juice, star anise and sugar in small sauce pan; bring to boil.  Gently boil 5 minutes; remove and discard star anise.
  2. Combine olive oil, vinegar, soy sauce, sesame oil, crushed red pepper and orange-juice mixture in blender. Cover; blend until smooth.  Set aside.
  3. Toss together coleslaw, cooked noodles, roast beef, snow peas and carrots in large bowl.  Add orange juice mixture and mandarin oranges; toss gently.  Chill, if desired, to let noodles absorb flavors.  Toss gently before serving.  Garnish with green onions and sesame seed.
