Asian Napa Cabbage and Pineapple Slaw

12 oz. Napa cabbage
2 cups DOLE® Chef-Ready Cuts, Pineapple Cubes
1 cup snow peas, ends trimmed and cut in half
1/2 cup medium DOLE Carrot, peeled, julienned
1/2 cup straw mushrooms, drained
2 tbsp. toasted sesame seed
Asian Rice and Peanut Dressing (recipe below)
1/3 cup chow mein noodles


  1. Combine coleslaw, pineapple cubes, snow peas, carrots, mushrooms and sesame seed in large bowl.  Toss with Asian Rice and Peanut Dressing, to taste.  Sprinkle with chow mein noodles.  Refrigerate any remaining dressing.
  2. Asian Rice and Peanut Dressing:  Whisk together 2/3 cup rice vinegar, 6 tablespoons peanut or canola oil, 1/4 cup chopped dry roasted peanuts, 4 teaspoons sesame oil, 4 teaspoons sugar, 1/4 teaspoon salt and ground black pepper, to taste, until blended.  Makes about 1 cup.
