Sticky Rice with Mangos

A tasty dish of sticky rice sweetened with mangoes.

INGREDIENTS:

1-1/2 cups short grain rice
2 DOLE® Banana(s), divided
3/4 cup sugar
1/4 tsp ground nutmeg
1/4 tsp salt
14 oz unsweetened coconut milk
2 cups DOLE Chef-Ready Cuts, Mango Cubes
optional toasted shredded coconut

DIRECTIONS:

  1. Rinse rice in strainer under running water, until water runs clear; drain.
  2. Combine drained rice and 2 cups water in medium saucepan.  Bring to boil, stirring occasionally.  Reduce heat; cover and simmer 18 to 20 minutes or until liquid is absorbed.  Remove from heat.
  3. Mash 1 banana in large bowl.  Add sugar, nutmeg and salt, stirring to dissolve sugar.  Gradually stir in coconut milk.  Add warm rice; let stand 15 to 30 minutes.  Stir in mango cubes.  Serve warm or at room temperature in large bowl or individual dessert dishes. Garnish with remaining banana, sliced, additional mango cubes and toasted coconut, if desired.
