Simply Good Cobbler

A simple recipe for simply good fruit cobbler.

6 lb. 10 oz. (1 (#10) can) DOLE® Tropical Fruit Salad, drained, reserve juice
1.33 oz (1/4 cup) cornstarch
9.33 oz (1-3/4 cup) packed brown sugar, divided
3 tbsp grated lemon peel
1 lb (2-1/2 cups) dates, chopped
8 oz (2-3/4 cups) quick cooking oats
8 oz (2 cups) all-purpose flour
5 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground nutmeg
8 oz butter or margarine, softened


  1. Scale drained tropical fruit salad into two half portions, 2 lb. 2 oz. each and place each portion in a 10x12x2-1/2-inch hotel pan.
  2. Blend until smooth reserved juice, cornstarch, 1/4 cup brown sugar and grated lemon peel. Divide mixture in half and pour each half over fruit in pans.
  3. Sprinkle 1-1/4 cups dates over fruit in each pan.
  4. Combine oats, flour, 1-1/2 cups brown sugar, cinnamon, ginger and nutmeg.
  5. Add butter and cut in until crumbly.
  6. Divide mixture in half and sprinkle each portion over fruit in pan.
  7. Bake at 375°F., for 40 to 45 minutes until filling is bubbling and topping is lightly browned. Cool slightly.
  8. Portion each pan into 18 servings. Serve warm or at room temperature.
