Saigon Cinnamon and Banana Rice Pudding

INGREDIENTS:

1-1/4 cups milk
1-1/2 cups DOLE® Fresh Frozen Sliced Bananas, partial thawed
1/4 cup honey
1 tsp vanilla extract
1/2 tsp ground Saigon cinnamon
1/2 tsp ground nutmeg
4 cups brown rice, cooked

DIRECTIONS:

  1. Combine milk, 3/4 cup banana, honey, vanilla, cinnamon and nutmeg in medium-large saucepan.  Bring to boil; reduce heat and simmer 4 to 5 minutes or until banana just softens.
  2. Add cooked rice; simmer, stirring occasionally, until heated through.
  3. Serve warm; garnish with remaining banana slices.
