Pineapple Oatmeal Cookies

The classic oatmeal cookie with pineapple.

INGREDIENTS:

2 lb. 13 oz. (15 cups) old fashioned oats
2 lb. 8 oz. (10 cups) all-purpose flour
1 tbsp + 2 tsp baking powder
1 tbsp + 2 tsp ground cinnamon
2-1/2 tsp salt
1 lb. 2 oz. (5-1/2 cups) sliced almonds, toasted
1 lb. 11 oz. (5 cups) golden or seedless raisins
2 lb. 8 oz. (7-1/2 cups) packed brown sugar
2 lb. 8 oz. (5 cups) butter, softened
5 egg(s)
6 lb. 10 oz. (1 (#10) can) DOLE® Crushed Pineapple, drained, reserve juice

DIRECTIONS:

  1. Combine oats, flour, baking powder, cinnamon, salt, almonds and raisins; set aside.
  2. Beat together brown sugar and butter until creamy.
  3. Beat in eggs, crushed pineapple and reserved juice.
  4. Stir in flour mixture.
  5. Use a #40 scoop to drop batter onto greased sheet pans. Press down to flatten. Bake at 350ºF., 20 to 25 minutes or until golden. Cool on wire racks.
