Pineapple Oatmeal Cookies
The classic oatmeal cookie with pineapple.
Ingredients
2 lb. 13 oz. (15 cups) old fashioned oats
2 lb. 8 oz. (10 cups) all-purpose flour
1 tbsp + 2 tsp baking powder
1 tbsp + 2 tsp ground cinnamon
2-½ tsp salt
1 lb. 2 oz. (5-½ cups) sliced almonds toasted
1 lb. 11 oz. (5 cups) DOLE Seedless Raisins
2 lb. 8 oz. (7-½ cups) packed brown sugar
2 lb. 8 oz. (5 cups) butter softened
5 eggs
6 lb. 10 oz. (1 (#10) can) DOLE Crushed Pineapple drained reserve juice
Directions
- Combine oats, flour, baking powder, cinnamon, salt, almonds and raisins; set aside.
- Beat together brown sugar and butter until creamy.
- Beat in eggs, crushed pineapple and reserved juice.
- Stir in flour mixture.
- Use a #40 scoop to drop batter onto greased sheet pans. Press down to flatten. Bake at 350ºF., 20 to 25 minutes or until golden. Cool on wire racks.
