Ingredients

6 tbsp unsalted butter melted

1 cup all-purpose flour

¼ cup yellow cornmeal

1 cup sugar divided

1-½ tsp baking powder

¼ tsp salt

¼ tsp ground cinnamon

1 large eggs

½ cup heavy cream

1 tbsp vanilla extract

1 tbsp lemon juice

2 cups DOLE Chef-Ready Cuts Diced Peaches thawed

1 cup frozen corn partially thawed

Directions

  1. Preheat oven to 350°F.  Brush melted butter in 10 to 12-inch heavy duty or cast iron skillet; set aside.
  2. Combine flour, corn meal, 1/2 cup sugar, baking powder, salt and cinnamon in large bowl.  Whisk together egg, cream, vanilla, remaining sugar and lemon juice in another bowl.  Stir wet ingredients into dry ingredients; until combined and smooth.
  3. Pour batter in prepared pan.  Evenly spoon peaches and corn over batter.  Bake 40 to 50 minutes, or until wooden pick inserted in center comes out clean.  Serve with whipped cream, if desired.
