Minted Ginger Fruit Salad

A refreshing fruit salad with a hint of mint.

24 fl. oz. (3 cups) water
15 oz. (1-1/2 cups) granulated sugar
1/4 cup fresh ginger, finely chopped
3 tbsp fresh mint, chopped
3/4 fl. oz. (1 tbsp + 1-1/2 tsp) lemon juice
2 lb. 4 oz. (9 cups) DOLE® Frozen Tropical Gold® Pineapple Chunks
2 lb. 4 oz. (9 cups) frozen DOLE Mixed Melon Chunks
1 lb. 8 oz. (6 cups) frozen DOLE Raspberries, partially thawed


  1. Combine water, sugar and ginger in saucepan.  Bring to boil; reduce heat and simmer 10 minutes.  Remove from heat; stir in mint.  Chill syrup.  Stir in lemon juice.
  2. Combine pineapple chunks and melon balls in non-reactive bowl.  Pour syrup over fruit to marinate.  Cover; chill 1 hour.  Sprinkle with raspberries before serving.
