Mandarin Orange Shortcake

A delectable shortcake complemented with mandarin oranges.

1 pt. (2 cups) whipping cream
2-1/2 oz. (1/2 cup) confectioners sugar
1 tbsp vanilla extract
16.3 oz. (1-3/4 cups) DOLE Mandarin Oranges drained
1-1/2 oz. (1/4 cup) crystallized ginger
10-3/4 oz. (1 whole) pound cake
16 oz. (2 cups) raspberry sauce
8 fresh mint sprigs


  1. Whip together cream, confectioner's sugar and vanilla until stiff.
  2. Fold in 1 cup mandarin oranges and ginger.
  3. Cut pound cake into 8 slices.
  4. Pour 2 tablespoons raspberry sauce on dessert plate.  Place cake slice on sauce and top with 2 additional tablespoons sauce.  Repeat preparing all slices.
  5. Top each slice with generous half cup of whipped cream, mandarin orange mixture.
  6. Top each serving with 2 tablespoons mandarin oranges and sprig of mint.
