Cherry Lime Pecan Crisp
Pecan crisp sweetened with cherry and lime.
Ingredients
6 cups frozen DOLE Dark Sweet or Red Tart Cherries
6 cups DOLE Chef-Ready Cuts Pineapple Cubes
2 Tbsp cornstarch
¼ cup sugar
1 tsp grated lime peel
¼ cup lime juice
18.25 oz (1 pkg) yellow cake mix
1 stick (½ cup) butter cut into thin slices
¾ cup pecan halves
Directions
- Preheat oven 350ºF.
- Stir together reserved juice and cornstarch in small bowl.
- Combine cherries, sugar, lime peel and juice in large bowl; stir to dissolve sugar.
- Arrange pineapple cubes evenly on bottom of 13x9-inch baking pan sprayed with nonstick cooking spray. Spoon cherry mixture over pineapple.
- Pour cornstarch mixture over fruit, sprinkle dry cake mix evenly over fruit.
- Arrange butter slices over cake mix and top with pecans. Bake 40 to 45 minutes or until top is lightly browned.
