Cherry Lime Pecan Crisp

Pecan crisp sweetened with cherry and lime.

6 cups frozen DOLE® Dark Sweet or Red Tart Cherries
6 cups DOLE Chef-Ready Cuts Pineapple Cubes
2 tbsp cornstarch
1/4 cup sugar
1 tsp grated lime peel
1/4 cup lime juice
18.25 oz (1 pkg) yellow cake mix
1 stick (1/2 cup) butter, cut into thin slices
3/4 cup pecan halves


  1. Preheat oven 350ºF.
  2. Stir together reserved juice and cornstarch in small bowl.
  3. Combine cherries, sugar, lime peel and juice in large bowl; stir to dissolve sugar.
  4. Arrange pineapple cubes evenly on bottom of 13x9-inch baking pan sprayed with nonstick cooking spray. Spoon cherry mixture over pineapple.
  5. Pour cornstarch mixture over fruit, sprinkle dry cake mix evenly over fruit.
  6. Arrange butter slices over cake mix and top with pecans. Bake 40 to 45 minutes or until top is lightly browned.
