Banana Raisin Cream Cheese Bars

Tasty cream cheese bars sweetened with banana and raisin.

INGREDIENTS:

1 lb 6 oz (4-1/4 cups) all-purpose flour
1 lb 4 oz (6-3/4 cups) rolled oats
1 lb 4 oz (3-1/3 cups) packed brown sugar
1 tbsp + 1-1/2 tsp baking soda
1 lb 12 oz (3-1/2 cups) butter or margarine
2 lbs 4 oz (4-1/2 cups) cream cheese, softened
2 lbs (4-1/2 cups) DOLE® Banana(s), pureed
1 lb 8 oz (4-1/2 cups) DOLE Banana, chopped
1 lb 8 oz (4-1/2 cups) seedless raisins

DIRECTIONS:

  1. Combine flour, oats, sugar and baking soda in mixing bowl. Cut in margarine until mixture resembles coarse crumbs.
  2. Press 1 lb. 12 oz. crumb mixture into each greased half sheet pan (18 x 13 x 1-inch).
  3. Bake at 350° F., 10 minutes or until light golden brown.
  4. Combine cream cheese and pureed bananas; beat well. Stir in chopped bananas and raisins.
  5. Spread 3 lb. 8 oz. cream cheese mixture over each crust.
  6. Divide remaining oat mixture evenly and sprinkle over pans.
  7. Bake 30 to 35 minutes longer. Cool. Cut 12 x 6. Store in refrigerator.
