Pacific Pineapple Salsa

This is a classic salsa, that be served as is or used to create many different salsas.

2 lb. (4 cups) DOLE® Pineapple Cubes, drained
2 oz. (1/4 cup) green bell pepper, finely chopped
2 oz. (1/4 cup) red bell pepper(s), finely chopped
2 oz. (1/4 cup) DOLE Red Onion, finely chopped
2 DOLE Green Onion, thinly sliced
2 tablespoons finely chopped fresh parsley
1 oz. rice wine vinegar
2 oz. (1/4 cup) olive oil
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 teaspoon sugar


  1. Combine all ingredients in non-reactive bowl; refrigerate 1 hour. Adjust seasoning and sweetness to taste. Hold for service.
