Special Pineapple Upside Down Cake

15 oz. caramel sauce
1 pound DOLE® Chef-Ready Cuts, Pineapple Cubes
1-3/4 cups all-purpose flour
1/2 cup almonds, sliced
3/4 teaspoon baking powder
1/2 teaspoon kosher salt
1-3/4 cups sugar
1/2 pound, softened unsalted butter
1 cup liquid eggs
3/4 teaspoon vanilla extract
3/4 cup sour cream


  1. Whisk flour, sugar, baking powder, salt and half of almonds in a mixing bowl.
  2. Add softened butter, sour cream, eggs and vanilla.
  3. Spray 5 stacking bowls with pan coating.  Pour 3 oz. of caramel in each bowl; add pineapple cubes and remaining almonds.
  4. Pour 8 oz. of batter in each bowl and bake for approximately 45 minutes at 325 degrees or until a test toothpick comes out of cake clean.
  5. When done baking immediately remove from bowl.
