Pineapple Shrimp Ceviche Tostada

INGREDIENTS:

1/2 ea red onion, finely chopped
3 ea fresh jalapeno pepper, diced
1 ea seedless cucumber, finely diced
1 pound cooked shrimp
2 cups DOLE® Chef-Ready Cuts, Pineapple Cubes
2 tablespoons chopped fresh mint
1/2 cup chopped fresh cilantro
2 ea lime, juiced
4 ea tostada shell
salt and ground black pepper, to taste

DIRECTIONS:

  1. Small dice the red onion, jalapeno, cucumber and add to a large mixing bowl.  Add shrimp, pineapple cubes, lime juice, mint, and cilantro.  Season with salt and pepper, to taste.  Serve over tostada shell.
