BBQ Glazed Salmon with Grilled Pineapple Spears and California Peach Salsa

INGREDIENTS:

2 oz. grilled DOLE® Chef-Ready Cuts, Pineapple Spears
7 oz. salmon filets
2.5 oz. House of Blues BBQ Sauce
3 oz. buttered rice
5 spears grilled asparagus
2 oz. Peach Salsa (recipe below)

DIRECTIONS:

  1. Peach Salsa:

    Mix diced peaches, red bell peppers, red onions, green onions, jalapeno, cilantro, lime juice and sugar in a mixing bowl. Add salt and pepper to taste.  Place in storage container and refrigerate.

  2. Assemble plate with pineapple spears, salmon filet, BBQ sauce, rice, asparagus, and peach salsa.
