Grilled Vegetarian Sandwich

Easy to make and vegetable packed sandwiches for anytime!

24 each DOLE® Pineapple Slices, drained, juice reserved
2 tablespoons olive oil
4 each garlic cloves, minced
8 each zucchini, cut lengthwise into 1/2-inch thick slice
6 each red bell pepper, cut into slices
2 each red onions, cut into 1/2-inch thick slices
1 each (10 oz.) pre-baked pizza crust
2 cups herb-flavored cream cheese, low fat or fat-free
3 cups low fat mozzarella or jack cheese, shredded


  1. Reserve 2/3 cup of juice from pineapple.  Combine reserved juice, oil and garlic.
  2. Grill zucchini, bell peppers, onions and pineapple slices; brushing with pineapple juice mixture during grilling.  Discard pineapple juice mixture after grilling.
  3. Cut pizza crust in half crosswise.  Slice each half horizontally.  Spread cut side with cream cheese.
  4. Layer on bottom half of each crust; zucchini, peppers, pineapple slices and onions.  Sprinkle with cheese and place on pizza crust tops.
