Chicken Pineapple Croissant Sandwich

Simple yet delicious chicken and pineapple sandwich.

24 each DOLE® Pineapple Slices, drained, juice reserved
1 cup mayonnaise
1 teaspoon garlic powder
1/2 teaspoon (optional) salt
2 lb. cooked chicken, diced
2 each red or green bell pepper, finely chopped
2 cups DOLE Celery, sliced
1/2 cup DOLE Green Onions, sliced
12 each DOLE Butter or Romaine Lettuce Leaves
12 each croissants, sliced


  1. Combine 2 tablespoons reserved juice, mayonnaise, garlic powder and salt.
  2. Combine chicken, bell pepper, celery, green onions and mayonnaise mixture.

  3. Place a portion of lettuce on bottom half of croissant.
  4. Top with 2 pineapple slices.  Use a #10 scoop to portion chicken mixture onto pineapple slices.  Place on croissant top and serve.
