Jicama Salsa with Pineapple and Cilantro

This combines pineapple, avocado and cilantro to give a flavorful salsa to serve as an appetizer or a side dish.

INGREDIENTS:

2 ripe avocado, halved, cut into 1/2-inch cubes
1-1/2 cups jicama, diced
3 tablespoons chopped fresh cilantro
2 tablespoons lime juice
1 tablespoon DOLE® Red Onion, finely chopped
1 tablespoon red bell pepper(s), finely chopped
1 teaspoon serrano chiles, finely chopped
1 teaspoon olive oil
2 cups DOLE Chef-Ready Cuts Pineapple Cubes
1/2 cup flaked coconut, toasted
smoked paprika
salt and ground black pepper, to taste

DIRECTIONS:

  1. Combine avocado, jicama, cilantro, lime juice, onion, red pepper, Serrano chile and olive oil in large bowl.  Stir in pineapple and coconut; season to taste with salt and pepper.
  2. Serve with tortilla chips or tostones.
