Curry Mandarin Sauce

This is a great sauce to serve with pork or chicken.

4 oz. (1/2 cup) butter or margarine
3 tablespoons curry powder
5-1/2 oz. (1 cup) onion, chopped
2 garlic cloves, minced
5 tablespoons all-purpose flour
8 fl. oz. (1 cup) chicken broth
2-1/2 cups DOLE® Mandarin Oranges, drained, syrup reserved
1 tablespoon orange marmalade


  1. Melt butter in skillet. Stir in curry powder, onion and garlic. Cook 3 to 4 minutes.
  2. Stir flour into margarine mixture. Blend in broth and reserved juice. Stir in marmalade. Cook until thick.
  3. Mix in mandarin oranges just before serving.
