Spinach and Peach Pizza with Goat Cheese

This vegetarian pizza has wonderful flavor combination with spinach, peaches and goat cheese.

Spinach and Peach Pizza with Goat Cheese

Ingredients

1 (12-inch) thin pizza crust partially cooked

olive oil

blackened seasoning

3 oz. (3 cups) baby spinach leaves

¼ cup red bell pepper cut into julienne strips

1 large garlic cloves sliced

1 cup DOLE Chef-Ready Cuts Diced Peaches

½ cup goat cheese crumbled

Directions

  1. Preheat oven to 450°F.
  2. Place pizza crust on pizza pan. Brush generously with olive oil and sprinkle with blackened seasoning, to taste.
  3. Saute spinach briefly in skillet in 1 teaspoon oil, until just wilted. Arrange cooked spinach on pizza crust.
  4. Top with red pepper and garlic slices. Sprinkle with diced peaches and cheese.  Drizzle generously with additional olive oil.
  5. Bake 12 to 15 minutes or until heated through.
