Peach Chipotle Barbacoa Pizza

This is a truly Mexican pizza with pulled pork and a chipotle and barbecue sauce topped with peaches and cheese.

INGREDIENTS:

1/4 cup chipotle salsa
1/4 cup barbecue sauce
2 cups cooked pulled pork
1 small shallot, thinly sliced
1 (14 to 16-inches) thin pizza crust, partially cooked
2 cups DOLE® Chef-Ready Cuts, Diced Peaches
1 cup shredded gouda cheese
1 cup mozzarella cheese, shredded
3 tablespoons chopped fresh cilantro

DIRECTIONS:

  1. Preheat oven to 450°F.
  2. Combine chipotle salsa and barbecue sauce together in a small bowl.
  3. Pour half of the salsa mixture over the pulled pork and mix well to coat.
  4. Brush remaining salsa mixture over pizza crust.  Top with pulled pork, shallots and diced peaches; sprinkle with cheese.
  5. Bake 12 to 15 minutes or until crust is golden brown.  Sprinkle cilantro over baked pizza.
