Fresh Fruit Pizza Cookie

Pineapple, bananas, kiwi and raspberries top this sweetened cheese pizza for a wonderful dessert.

INGREDIENTS:

1 pkg. (16 oz.) refrigerated sugar cookie dough
1 pkg. (8 oz.) cream cheese, softened
1/3 cup sugar
1 teaspoon vanilla extract
2 cups DOLE® Fresh Tropical Gold® Pineapple Chunks
2 DOLE Kiwi or Mango, peeled, sliced
1 DOLE Banana(s), sliced
1/4 cup DOLE Raspberries
1/4 cup apricot jam, melted

DIRECTIONS:

  1. Press cookie dough on bottom of lightly greased 14-inch pizza pan.  Bake at 350 F., 12 to 15 minutes or until light brown.  Cool to room temperature.

  2. Beat cream cheese, sugar and vanilla in medium bowl until smooth and blended.  Spread over crust.  Cover and refrigerate until ready to serve. 
  3. Arrange pineapple around outer edge of cream cheese.  Arrange kiwi slightly overlapping pineapple.  Continue with banana and raspberries in center.  Brush with jam.
