Dole Pina Colada Pizza with Macadamia Nuts and Caramel

This deep dish pizza is a perfect dessert item with cheese, pineapple coconut and macadamia nuts.

roasted macadamia nut oil
8 oz. fresh pizza dough
1/2 cup mascarpone cheese, softened
1 eggs
1/4 cup flaked coconut
1/2 cup (3 oz.) DOLE® Pineapple Tidbits
1/4 cup flaked coconut, toasted
1/4 cup toasted macadamia nuts, coarsely chopped
2 tablespoons caramel sauce
optional whipped cream
grated chocolate, optional
fresh mint leaves (optional)


  1. Oil 10-inch deep dish pan with roasted macadamia oil.  Work dough into bottom of pan and up sides slightly.
  2. Stir together cheese, egg and flaked coconut in bowl.   Spread into pan.  Sprinkle pineapple tidbits, toasted coconut and macadamia nuts over cheese mixture.
  3.  Bake at 475 F. 10 to 15 minutes or until golden brown.  Cut into 4 pieces.
  4. Plate presentation:  Drizzle caramel sauce, in squirt bottle,  onto 11-inch plate, in zig zag pattern.  Place pizza slice on top of sauce.  Garnish with whipped cream, grated chocolate and fresh mint, if desired.
