Warm Spinach Wrap with Chicken and Peaches

This is a great on the go wrap with spinach, chicken and peaches.

2 cut into strips boneless, skinless chicken breast halves
3 tablespoons olive or vegetable oil
1/2 cup almonds, sliced
1 cup red onion, sliced
1-1/2 cups DOLE® Chef-Ready Cuts Diced Peaches, thawed
1/3 cup bottled balsamic vinaigrette
1 pkg. (6 oz.) DOLE Baby Spinach
1/4 cup golden or seedless raisins
salt and ground black pepper, to taste
4 (10-inch) flour tortillas, burrito size, warmed


  1. Stir-fry chicken in 2 tablespoons oil in large deep skillet or Dutch oven 4 to 5 minutes, or until chicken is no longer pink in center. Add almonds; cook 1 minute longer. Remove from skillet; set aside.
  2. Add remaining 1 tablespoon oil to skillet; cook onions, stirring, 2 minutes. Add peaches and cook 1 to 2 minutes longer or until onions are tender.
  3. Add balsamic vinaigrette to skillet; bring to boil. Reduce heat; add spinach, cooked chicken and raisins. Cover and cook 2 to 3 minutes or until spinach is just wilted. Stir well. Salt and pepper to taste.
  4. Prepare wraps divide chicken-spinach mixture on warmed tortilla. Fold in sides and roll up. Cut in half, if desired.
