Seven Seas Scallops

Scallops are served with a seasoned mandarin sauce.

15 oz. (2 cups) DOLE® Mandarin Oranges, undrained
6 each egg yolks, beaten
1/2 oz. lemon juice
12 oz. clarified butter
1/8 teaspoon cayenne pepper
salt, to taste
72 large sea scallops
ground black pepper, to taste


  1. Pour mandarin oranges and juice in blender or food processor container puree mandarin oranges until smooth. Place mixture in saucepan over medium heat, reduce by 1/2. Cool to room temperature.
  2. Combine egg yolks, lemon juice and 1 ounce reduced mandarin orange mixture in top of double boiler. Cook until stiff enough to make a figure 8.
  3. Slowly add clarified butter and mandarin orange puree, whisking constantly until sauce is thick.
  4. Season with cayenne pepper and salt. Hold for service.
  5. Season scallops with salt and pepper, sear in 2 ounces butter over medium-high heat.
  6. Finish in 350ºF. oven for 6 to 8 minutes. Do not overcook.  Arrange scallops on individual plates, top with sauce and garnish with additional mandarin oranges.
