Caribe Pork Chops and Grilled Pineapple

Pork chops are marinated in a spice orange marinade before grilling and adding grilled pineapple slices to top off.

INGREDIENTS:

1 qt. (4 cups) orange juice
4 oz. (1/2 cup) vegetable oil
1/2 cup chopped fresh cilantro
1 tablespoon fresh ginger, grated
1 tablespoon ground black pepper
1 tablespoon garlic salt
7.5 lb. 24 (3/4-inch thick) pork chops
24 each DOLE® Pineapple Slices, drained

DIRECTIONS:

  1. Combine orange juice, oil, cilantro, ginger, pepper and garlic salt in two hotel pans. Add pork chops turning to coat. Cover; refrigerate marinating 1 hour.

  2. Remove from marinade, discarding marinade. Grill pork chops until cooked and no longer pink in center.
  3. Add pineapple slices to grill; cook until golden brown.

  4. Top each pork chop with grilled pineapple slice.
