Brazilian Sausage Sandwich
Sweet and spicy sausage sandwich with a Latin flare.
Ingredients
2 tablespoons olive oil
2 medium thinly sliced onion
1 large green bell pepper thinly sliced
1 teaspoon ground cumin
¼ teaspoon red pepper flakes
3 large tomatoes seeds removed and diced
¾ cup strong brewed coffee
salt to taste
8 fully cooked smoked sausages
1-½ cups partially thawed DOLE Chef-Ready Cuts Pineapple Cubes
8 French bread or Hoagie rolls
Directions
- Heat olive oil in large skillet or sauce pot; sauté onion, green pepper, cumin and red pepper flakes 5 minutes or until onion begins to caramelize.
- Add chopped tomatoes, coffee and salt; simmer for 10 minutes. Then add sausage and pineapples, simmer 5 minutes longer or until sausage is heated through. Meanwhile, heat rolls.
- Serve 1 sausage in each warmed roll spooning tomato and pineapple mixture over the top.
