Brazilian Sausage Sandwich

Sweet and spicy sausage sandwich with a Latin flare.

2 tablespoons olive oil
2 medium DOLE® Onion, thinly sliced
1 large green bell pepper, thinly sliced
1 teaspoon ground cumin
1/4 teaspoon red pepper flakes
3 large tomatoes, seeds removed and diced
3/4 cup strong brewed coffee
8 fully cooked smoked sausages
1-1/2 cups partially thawed DOLE Chef-Ready Cuts Pineapple Cubes
8 French bread or Hoagie rolls
salt, to taste


  1. Heat olive oil in large skillet or sauce pot; sauté onion, green pepper, cumin and red pepper flakes 5 minutes or until onion begins to caramelize.
  2. Add chopped tomatoes, coffee and salt; simmer for 10 minutes.  Then add sausage and pineapples, simmer 5 minutes longer or until sausage is heated through.  Meanwhile, heat rolls.
  3. Serve sausage in each roll spooning tomato and pineapple mixture over.
