Grilled Teriyaki Pineapple Spears with Chicken

This is a great Asian style dish, the sauce is a soy, hoisin, plum flavored which is brushed over the pineapple and chicken during grilling

INGREDIENTS:

36 DOLE® Chef-Ready Cuts, Pineapple Spears
4 oz. (1/2 cup) hoisin sauce
2 oz. (1/4 cup) plum sauce
2 oz. (1/4 cup) seasoned rice vinegar
2 oz. (1/4 cup) less sodium soy sauce
1 oz. (2 tablespoons) canola oil
1 tablespoon fresh ginger, grated
1 to 2 teaspoons Asian chili sauce
5 lb. (12 each) boneless, skinless chicken breasts

DIRECTIONS:

  1. Skewer pineapple spears lengthwise, 3 per skewer.

  2. Stir together hoisin sauce, plum sauce, rice vinegar, soy sauce, oil, ginger and chili sauce in bowl.

  3. Grill chicken and pineapple. Brush with sauce as needed.

  4. Serve one chicken breast and three pineapple spears per portion.
