Seared Wasabi Mango Scallops

This appetizer combines mango with hot wasabi flavor served on sea scallops.

2 cups DOLE® Chef-Ready Cuts Mango Cubes
1/4 cup red bell pepper(s), finely chopped
2 tablespoons fresh cilantro, finely chopped
2 tablespoons lime juice
1/4 teaspoon wasabi paste
1/4 teaspoon smoked paprika
salt and ground black pepper, to taste
2 tablespoons olive oil
12 large sea scallops
1/4 to 1/3 cup Parmesan cheese, grated


  1. Combine mango cubes, red bell pepper, cilantro, lime juice, wasabi paste and paprika in medium bowl, mixing well.  Season with salt to taste; set aside.
  2. Heat olive oil in large nonstick skillet over medium-high heat.  Sprinkle scallops with salt, pepper and Parmesan cheese.  Cook scallops 5 to 6 minutes, turning once, or until lightly browned (Do not overcook).  Remove to serving plate; top with mango mixture.
