Mango Lime Tostones with Mango Lime Salsa

This combines green plantains with mango,lime and cilantro salsa.

8 green plantains, peeled, sliced diagonally
salted water
Mango Lime Salsa (recipe below)
8 oz. butter or margarine, divided
4 lime, cut in half
2 teaspoons salt, divided


  1. Soak plantains in salted water while making salsa.  Drain plantains; pat dry.
  2. Melt 1 oz. butter in preheated sauté pan.  Add about 12 plantain slices and sauté until golden brown on both sides.  Sprinkle with 1/2 lime and 1/4 teaspoon salt.  Repeat with remaining plantains.  Served cooked plantains topped with Mango Lime Salsa.
  3. Mango Lime Salsa:  Combine 3 cups DOLE Chef-Ready Cuts Mango Cubes, partially thawed, 4 tablespoons lime juice, 2/3 cup diced red bell pepper and1/4 cup fresh chopped cilantro in bowl.  Season with salt and pepper to taste.  Serve at room temperature.
