Minty Tropical Salsa

A tropical fruit salsa that is seasoned with mint.

16 fl. oz. (2 cups) apple cider vinegar
1 cup sugar
1 tsp. crushed red pepper
1 tsp. red bell pepper, chopped
2 cups frozen DOLE® Mango Chunks, partially thawed
2 cups frozen DOLE Tropical Gold® Pineapple, partially thawed
1/3 cup fresh mint leaves, chopped
1 tsp. kosher salt


  1. Place first 5 ingredients in saucepan and simmer over low heat until slightly thickened.
  2. Place mango and pineapple in food processor container and pulse until fruit is coarsely chopped.  Place in large bowl.
  3. Add cooled vinegar mixture, mint, and salt, stir well.  Serve with grilled seafood or chicken.
