Leipajuusto Grilled Cheese

Leipajuusto cheese smothered with peach-lingonberry jam, griddled between two pieces of rye bread.

Leipajuusto Grilled Cheese INGREDIENTS:

2½ lbs Squeaky bread cheese
1¼ cups Peach-Lingonberry Jam, sub-recipe
20 slices Rye bread, sliced
1¼ Tablespoons Butter, unsalted, softened
5 cups Peach Mustard, sub-recipe

Peach-Lingonberry Jam INGREDIENTS:

3 cups DOLE® Chef-Ready Cuts Diced Peaches, thawed
1 cup Lingonberry Jam, purchased
¼ teaspoon Green cardamom, ground
½ cup Orange juice
2 Tablespoons Gelatin, powder

Peach Mustard INGREDIENTS:

3¾ cup DOLE Chef-Ready Peach Frozen Purée, thawed
1¼ cups Stone ground mustard
3¾ cups DOLE Chef-Ready Fruit Frozen Peach Purée, thawed
1½ Tablespoons Honey

Peach-Lingonberry Jam DIRECTIONS:

  1. In a large bowl, combine orange juice and gelatin; stir until well combined. Let stand for 15 minutes.
  2. In a medium size pot, whisk together remaining ingredients and bring to a gentle simmer over medium-low heat; allow to warm for 15 minutes.
  3. Remove pot from heat and pour over gelatin mixture; stir vigorously to combine all ingredients.
  4. Cover and refrigerate until chilled.

Peach Mustard DIRECTIONS:

  1. In a medium bowl, combine all ingredients; stir until well combined.
  2. Cover and reserve chilled until use.

TO SERVE:

  1. Spread softened butter on outermost sides of each bread slice.
  2. Stack one slice of rye bread with 4 oz. squeaky bread cheese and 2 Tablespoons Peach-Lingonberry Jam.
  3. Over medium-low heat, griddle sandwich until golden-brown on each side, about 4-6 minutes per side.
  4. For each serving, plate one sandwich with ½ cup of Peach Mustard.
Yield: 10 portions
